What fan count does 0.05 realistically support?

Most artists work comfortably up to around 8D at this diameter before the weight becomes the limiting factor on an average natural lash. Beyond that, dropping to 0.03 gives the same visual density at a lower load rather than pushing 0.05 further.

Why do the mixed ranges here go down to 5mm when other trays start at 6 or 7?

Because the innermost natural lashes are genuinely short and fine, and placing a 7mm extension there produces a heavy, unnatural inner corner that sheds quickly. Having true 5mm sizes is what allows the inner third of a set to look correct rather than approximated.

Should I fan wider or narrower on fine natural lashes?

Narrower. Fan width determines leverage on the base regardless of fibre count, so a wide fan on a fine lash fails even when the total weight is modest. Keep fans compact where the lash is fine and reserve wider fans for the strong central lashes.

How much should I reduce my dip depth from 0.07?

Meaningfully - most artists find roughly half. The reliable signal is the fan itself: if fans arrive on the lash slightly closed when your fanning is good, the dip is too deep or the glue dot has begun to skin.

Is 0.05 usable for classic sets?

It can be used, but a single 0.05 lash reads as very light and most clients will find a classic set at this diameter underwhelming. It is a fanning fibre; for classic work 0.07 upward gives the presence clients expect.
